Honey Apple Tart

2. Make the crust: Preheat the oven to 350ºF. Coat a 9-inch tart pan with a removeable bottom with cooking spray. Beat the butter, sugar, and honey in a medium bowl at medium speed with an electric until light and fluffy. Gradually add the flour and beat until combined. Press the shortbread mixture into the prepared pan, onto the bottom and up the sides. Bake for 20 to 25 minutes or until the crust begins to brown. Remove the crust from the oven and immediately press the crust down with the back of a wooden spoon. Set aside to cool completely, about 15 to 20 minutes.

3. Make the tart: Toss the apple slices in lemon juice and cinnamon. Drizzle half of the whipped honey onto the bottom of the tart crust and spread into an even layer with an offset spatula. Stack and arrange the apple slices into the pie crust creating an artful pattern. Drizzle the top of the apples with the remaining honey and sprinkle the butter over the top. Bake for 20 to 25 minutes or until the apples are tender.

To Serve: Drizzle more honey over the top of the cooked tart and cut into slices.

Pro Tip: We used a mandolin to thinly slice the apples, and we kept the slices packed together for easy assembly. If you don’t have a mandolin, use a sharp chef’s knife to cut the apples into the thinnest slices you can.
