Overview


A classic south of the border breakfast with a sweet honey hot sauce finish.

You'd be surprised how well honey and heat go together to create a breakfast meal that will leave you wanting more. Eggs don't have to be boring, and flavor is always better with honey.

Instructions


What to do:

1. Wash Up

2. Make Ranchero Sauce: In a blender, place the tomatoes, onion, garlic, and jalapeno. Blend until smooth (add a touch of water if the mixture is too thick). Heat olive oil in a skillet over medium heat. Pour in the blended mixture and cook for 8–10 minutes, stirring occasionally, until slightly thickened. Season with salt and pepper, a squeeze of lime and a tiny drizzle of honey to round it out. Reduce heat and keep warm while making the rest of the dish. 

 3. Warm the Tortillas: Toast corn tortillas in a dry skillet until soft with a little char. Remove and keep warm.

4. Fry the Eggs: In the same skillet, add enough oil to fry the eggs sunny-side-up or over easy. Season with salt and pepper

To Serve: Place 2 tortillas on each plate. Spoon warm black beans over each, then top each with the fried eggs. Gently ladle the fresh ranchero sauce on top. Garnish with avocado, cilantro, and jalapeno. Generously finish with Honey Hot Sauce.

The Original Honey Hot Sauce

Ingredients

  • 4 corn tortillas
  • Avocado or olive oil
  • 1 cup cooked and lightly smashed black beans, warmed (canned is fine)
  • 1 avocado, sliced
  • 6 eggs
  • Cilantro, chopped
  • Jalapeno, sliced
  • Kosher salt and coarsly ground black pepper to taste
  • Savannah Bee Company Honey Hot Sauce (for finishing)
  • FOR THE RANCHERO SAUCE:
  • 3 ripe tomatoes (Roma or vine-ripened work beautifully), quartered
  • 1 small white onion, chopped
  • 1 clove garlic
  • 1 small jalapeño pepper (seeded for less heat)
  • 1 tablespoon avocado or olive oil
  • Salt to taste
  • Optional: squeeze of lime and a drizzle of Savannah Bee Company Honey for balance
